Olive’s Kitchen: Sautéed Pork Chops with Apples

 

It’s harvest season!  It’s usually a time for celebration in all cultures, so we thought we’d share one of our favorite fall recipes. 

If you’re following a keto diet, or carb cycling, this recipe is good for ‘high protein’ days, low on carbohydrates and sodium, with no sugar added. 

1Sautéed Pork Chops with Apples

Ingredients (for 6 servings):


6 bone-in pork chops (loin or shoulder), cut 3/4 inch thick

Coarse salt and freshly ground black pepper

1 tablespoon extra-virgin olive oil or vegetable oil

2 tablespoons unsalted butter

1 large white onion, sliced

2 to 3 apples, cored and sliced (about 3 cups)

1 cup cider


Step 1

Trim the chops of excess fat. Sprinkle lightly with salt and pepper on both sides. Heat a 14-inch cast-iron skillet over high heat, and then add olive oil. Lay in the pork chops and leave them for a few minutes, until they brown well. Turn and repeat for ten minutes. Transfer the chops to a warm plate to rest.


Step 2

Add the butter into the pan. Add the onion and apples. Sauté until the onion slices are lightly caramelized and the apples have begun to soften. Stir in the cider, and simmer the mixture until it thickens, for a few minutes. Return pork chops to the pan.


Step 3

Cook until the chops are tender, about 5-7 more minutes, depending on how thick your chops are. Turn the chops and cover them with the apple mixture. Serve the chops with a large spoonful of the apple-onion mixture over the top.
