Olive's Kitchen : Healthy Grilled Cheese Sandwich

This coming January 20th, all cheese aficionados can celebrate, as it's National Cheese Lovers Day! Whether you savor it melted, shredded, crumbled or in cubes, cheese is a delicious addition to any dish. Undoubtedly, cheese is the most scrumptious source of protein available! 

So, why not celebrate National Cheese Lovers Day with a healthier twist on the classic grilled cheese sandwich? Here's what you'll need:

Serves: 1

Prep time: 5 minutes

Cook time: 5 minutes


Olive oil for cooking

1 cup spinach

2 slices bread

2 slices tomato

1 ounce gouda, sliced

  1. In a pan, heat 1 teaspoon of olive oil over medium. Add spinach and sauté until wilted. Remove from the pan and set aside.
  2. Lightly brush the outsides of your bread with olive oil.  Stack gouda, tomato and spinach on the inside of one slice and top with the other slice.
  3. Place your sandwich in the pan and heat over medium.  Cook until bread is lightly browned on both sides and the cheese has melted. Transfer the sandwich to a plate and serve.
